摘要
亞麻籽油為富含α-次亞麻油酸的植物油,是攝取ω-3脂肪酸的良好來源,而市售許多品牌之亞麻仁油,可能因不同加工方式而使得產品油脂中脂肪酸的含量有所差異。本研究參考衛生福利部食品藥物管理署公告之食品中脂肪酸之檢驗方法,以氣相層析火焰離子偵測儀(GC-FID)分析市售七種廠牌之亞麻籽油脂肪酸組成。經分析後結果顯示,反式脂肪酸含量除D廠牌外其餘皆低於0.3%。而委託廠商之G廠牌,於單元不飽和脂肪酸、ω-3脂肪酸含量及ω-6/ω-3脂肪酸攝取比值較其他廠牌無明顯之優勢,而有健康安全疑慮之芥酸(C22:1ω-9)於 G廠牌雖有檢測出,但其含量遠低於聯合國糧農組織及世界衛生組織的規範,因此完全無安全之疑慮,至於飽和脂肪酸G廠牌含量較低,有助於減少飽和脂肪酸的攝取,因此為G廠牌較其他廠牌亞麻籽油占優勢的優點。

Linseed oil, a vegetable oil, is rich in α-linolenic acid, which is a good source of omega-3 fatty acids. Commercial linseed oil may exhibit the differences in fatty acid content due to different processing methods. This study is to analyze fatty acid composition of seven commercial linseed oils by gas chromatography-flame ionization detection (GC-FID) according to the method of Food and Drug Administration, Ministry of Health and Welfare. The results indicated that the content of trans-fatty acids in commercial linseed oils were less than 0.3% excluding Brand D. The monounsaturated fatty acids, ω-3 fatty acid content, and ω-6/ω-3 fatty acid ratio, in Brand G had no advantage compared with other brands. Erucic acid (C22:1ω-9) with health and safety concern was detected in Brand G, but the content was less than the standard of Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO). The Brand G may exhibit the advantage in the lower content of saturated fatty acids in comparison to other brands, and may be helpful in reducing the intake of saturated fatty acids.
